Salad with Chia Yoghurt Dressing

Ingredients (for 2-3 servings):

  • 60g Sana Chia seeds, seasonal fruit (e.g. mango, strawberries, apple, kiwi, pineapple, orange).
  • Cherry tomatoes
  • Cucumber
  • Juice of ½ lemon
  • 150ml natural Greek yoghurt
  • A pinch of bourbon vanilla

Instructions:
Salad: Wash and peal the fruit and remove their seeds. Cut the fruit, cucumber and cherry tomatoes in bite size cubes and mix them in a bowl. Keep a ratio of ¾ fruits and ¼ tomatoes and cucumbers. Keep in fridge while preparing the dressing.
Dressing: Add chia seeds, the bourbon vanilla and the lemon juice to the Greek yoghurt and mix well in a bowl. Add the dressing to the salad and mix carefully.

Consume within 1 day. Keep refrigerated and covered with shrink wrap or aluminum foil.

Tip:
Chia seeds are great to add a little crunchiness and bite to any kind of salad. An additional benefit of chewing the seeds is the faster absorption of the nutrients contained within them. Find out how much of Sana Chia seeds you like in your favorite salad.
